On the old forum, we had a recipe thread that was eaten by the Forum Glitch Monster some time ago. I liked it and some of us had some really great recipes to share--so I thought it'd be fun to bring it back! Post your favourite recipes here!

Wrong time of year, but this was sent to me by a company I deal with in Texas (there are nice people in Texas).
Jack Daniel's Cranberry Sauce 1 pound fresh or frozen cranberries (4 cups) 2 cups Jack Daniel's Sour Mash Whisky 2 cups sugar (adjust to taste) 1. Rinse cranberries with cool water, and remove any stems or blemished berries. 2. Mix sugar and Jack Daniel's until sugar is totally dissolved. 3. Put cranberries in Pyrex cooking dish, pour in Jack Daniel's mixture and cover. 4. Put in pre-heated 350 degree oven for 1 hour. Turn oven off and let sit 15 minutes. 5. Put in refrigerator overnight & serve. Can you say YUM!

Sicilian Mock Duck: Ingredients: 1 LARGE full cut round steak, about 1" thick. 1/2 bag of fresh spinach, blanched (use the whole bag if you want more colour) 1.5 cups breadcrumbs mixed with grated Romano 6-8 asparagus spears 4-5 hard boiled peewee eggs, peeled (original calls for quail eggs, good luck) 4 slices Proscutto ham, paper thin 6 button mushrooms 1 small can tomato paste 1/2 - 1 cup grated Provelone cheese (Gouda/Edam for substitute) 1-2 cups red wine 1/4 to 1/2 cup of good beef stock 2-3 cloves garlic 1 small onion, quartered
Instructrions: Lay out steak, tenderize it with a meat mallet. It will get bigger, but thinner. On top of steak, sprinkle breadcrumb mixture, cover with a layer of spinach, then the Provelone, then the ham, and one more layer of spinach. Place asparagus in a row, crossways, about 1-1/2 inches apart across the top. Place eggs in one row, between asparagus, mushrooms on next row. Spiral roll it, and tie it off with butcher twine. Set aside. In mixing bowl, combine tomato paste, stock and wine, add seasonings to taste. Pour liquid into a crock roaster, or into a slow cooker big enough to hold the rolled meat. Place meat on top of liquid, toss in garlic and onions. Slow cook for about 2-3 hours (250F in crock roaster)
Slice across, so the pretty stuff inside shows. Plate it, drizzle with the sauce, serve with Linguini topped with garlic butter and olive oil, and a side of steamed asparagus.
The flavour is remarkable, and your guests will be impressed.

Loaded mashed potatoes:
-Peel 3-4 russet potatoes and cut into cubes. -Boil until soft; mash with butter and milk. -Sprinkle some garlic powder over the top. -Add a dollop of sour cream and some shredded cheese. -Stir until it comes together and the cheese melts. -Stir in some crumbled bacon. Might be a little soupy; that's OK. -Stuff in face NOM NOM NOM...

Ace thread idea!
Spring is rolling around and that means summer! I love making ice cream and other frozen desserts during the summer cos you can get really creative and use fresh ingredients and avoid preservatives. It really makes a difference, for you and your guests. Friends/family always seem to love it when I whip up an ice cream or gelato. This is one of my favourite recipes; wish I could stake a claim, but it comes from Cooking Light.
Strawberry Buttermilk Gelato
Yield
8 cups (serving size: 1/2 cup)
Ingredients
* 2 cups sugar * 2 cups water * 5 cups quartered strawberries (about 4 pints) * 2 cups low-fat buttermilk
Preparation
Combine sugar and water in a large saucepan; bring to a boil, stirring until sugar dissolves. Pour into a large bowl; cool completely.
Place strawberries in a blender, and process until smooth. Add strawberry purée and buttermilk to sugar syrup; stir to combine.
Pour the strawberry mixture into the freezer can of an ice-cream freezer, and freeze according to the manufacturer's instructions. Nutritional Information

Cold Salads:
Pasta Salad:
Boil 1 lb of favourite pasta (Rotini, Elbows, Penne, etc) until el-dente - strain, rinse in ice cold water, set aside. Combine 1 jar of salad dressing (Miracle Whip or generic equivalent) Add about 1/4-1/2 cup of favourite Buttermilk Ranch Dressing Add 1 medium onion, finely chopped Add 2 cans of flaked white Tuna, or for the gourmet version, 2 cans of crabmeat or lobster Season with salt and pepper, onion and garlic powder to taste. Mix together, put in serving bowl. Top with a shake or two of Paprika, decorate with sliced green/red bell peppers. Refrigerate, covered, until well chilled. Great at a barbeque.
No Miss Potato Salad:
Peel and dice about 3-5 lbs of potatoes. Hard boil 6-8 large eggs, peel. Boil potatoes until tender - DON'T overcook! Mash the eggs with a potato smasher, add about 2-3 cups of salad dressing, add 1 medium onion, finely diced. Season with salt and pepper. Fold in diced potatoes, mix well. Put it in a serving bowl and chill, covered.
Good eating at a cookout/barbeque, or for yummy snackies when you got the munchies.

Jello-cheesecake squares
1 cup heavy whipping cream 1 8-oz block of cream cheese 1 package Jello flavor of your choice
Combine heavy cream and cream cheese in saucepan; heat and stir until cream cheese melts. Stir in package of Jello; pour into a pan and chill until set. Cut into squares.
I haven't tried this yet so I don't know if it's as good as it sounds....

Raspberry coulis
X x punnet of raspberries
1 tsp orange juice per punnet
1 tsp white cane sugar per punnet
( Anyone remember when punnets were made of wood and hand woven? )
Sort through the raspberries, chuck out any bad ones, wash the rest.
Blend the ingredients or push through a strainer.
Eat with plain fat free sugar free yoghurt or fresh fruit, with pineapple or mango is very yummy.
It freezes well, put in an ice cube tray.

Americans seem to like this, it's a little bit exotic but familiar at the same time. lol. It's too rich for my taste and not for everyday.
Mango and chicken salad.
Two skinless fillets of chicken, try to get organic. Simmer the chicken in water until cooked, take off heat, let rest for 30 minutes in the water. Chop into 1 cm squares.
A nearly ripe mango ( not squishy) , peeled and chopped into 1 cm chunks
2 sticks celery, stringed and cut into 5mm slices
60 ml low fat best quality real mayonnaise
200 g low fat plain yoghurt
2 big spoons of mango chutney
1 tbs lemon juice
2 tsp mild whole curry powder ( a mix that has some whole spices)
1/4 cup chopped fresh coriander/cilantro
Butter lettuce.
---------------
Mix it all up and serve on the lettuce. To extend it add a peeled chopped apple or cucumber.
You can have it with cold potatoes or even fresh crusty bread.

Take some ground beef, the leaner the better. Brown it. Drain the fat. Take the drained meat, a packet or two of brown gravy mix (use however many packets you need), and the amount of water specified by the mix packet and mix it all in a pot. Heat.
This will produce a meat gravy mix that can be served on top of rice; add in a vegetable and you have a complete meal.

Throw away the gravy mix, it's unhealthy, revolting and reads like a recipe for dog food. Keep the pan juices, you need the calories. Add a tablespoon or two of ground garam masala instead. Add a chopped onion at the same time you cook the mince. Yes, add vegies. Eat with rice , you could add some kejap manis or sweet chilli sauce at the table if it's too dry for your taste.
