Have you ever watched a movie, looked at one of the characters and thought "I want a boy/girlfriend like that"? Which characters do you love for their personality, mannerisms, etc.? They can be from animated or live-action films. They don't even have to be humans.
Katie Van Waldenberg (Blades of Glory) - she's pretty much the perfect girlfriend: she's beautiful, innocent, sweet, down-to-earth, and most importantly, loyal.
The girl squirrel (The Sword in the Stone) - she's feisty, cute, loves Arthur like crazy and isn't afraid to show it, and won't hesitate to kick some ass to protect him. Of course, he had to fuck it all up by turning back into a human and breaking her heart.
Vixey (The Fox and the Hound) - she's compassionate, helpful, friendly, and damn, her voice sounds sexy. Another Disney example of "if only she was real and a human".
Hermione Granger (Harry Potter) - she's smart, loyal, has standards and values, and is drop dead sexy (at least in the movies). She's the kind of chick you'd want not only as a girlfriend, but as a friend in general.

Simba (Adult) from The Lion King. For being so... awesome, I guess for lack of a better word.
If you don't mind me including video game characters, King Bowser Koopa, for more or less being a ruler that is respected by his people, for being awesome, for being evil, for being apparently well-intentioned father, and so forth.
Though I'm quite happy with my current boyfriend, actually :3

Not so much girlfriend material so much as makes my cold heart melt with an overabundance of "give a damn" would be the Little Match Girl from the animated Disney short.
That squirrel girl you mentioned has actually been given a pretty good "Good End" story by /co/, they even gave her a name and human fanart (that isn't terrible and is quite adorable).

As far as girlfriend material goes, I'd totally go for Wasp from Avengers: Earth's Mightiest Heroes. Spunky, smart, fun to be around, as well as being the most excitable of the group makes her just so very attractive to me.
