I just made this: White hot chocolate 1/4 cup white chocolate chips ~1/4 cup heavy cream 3/4 cup milk Put white chips and cream in a small saucepan; heat over medium flame until the chips are melted. Add the milk; continue to heat until bubbles form and it gets a little frothy. Pour in a mug; top with aerosol whipped cream and cocoa powder to make it look pretty. SO FUCKING GOOD!!! I wish I could chug it all in one gulp but it's too hot. I burned my tongue and I don't even care, it's that good. I'll post some of the other stuff I've been making later (all terrible for a diabetic).

I need to dig them out, but I have awesome recipes for Spanish rice, chicken cacciatore, chicken paprikash (with dumplings) and the best meatloaf in the world, if anyone is interested. I don't want to go to the effort of typing them up if no one wants them, though.

Gumbo:
3 tbsp butter 3 tbsp flour chopped onion chopped green bell pepper 1 tbsp minced garlic 1 can diced tomatoes 6 cups chicken broth Cajun seasoning parsley flakes 1 bay leaf shrimp andouille sausage, cut up chopped okra or file' powder rice
Make roux: Whisk the butter and flour together in a pot over medium heat; keep whisking until the roux turns a warm brown color, almost like melted chocolate--this can take 20 minutes. Add the onion, pepper and garlic; cook until the onion starts to get translucent. Add the tomatoes and the chicken broth. Add the Cajun seasoning to taste; if you are using andouille sausage you can use less because the sausage adds a lot of heat. Add 1 tbsp of parsley flakes and bay leaf. Bring the whole thing to a simmer/low boil. Add your shrimp and/or sausage. If you are using okra add that now; okra is traditionally used to thicken it but as not everyone enjoys okra, if you are using file' powder add that at the end (I think it says 1-1/2 tsp on the container). Remove the bay leaf and serve over cooked rice (I prefer brown rice).
I need to make this again now that I have file' powder.

Today I went to a holiday party and I had pretty much the entire pan of vegetable pizza/pastry. It's amazing. It looks like this. I am unsure of the exact recipe, but these are the ingredients.

Avacado Eggs Benedict (recipe is for 6)
Ingredients: 1/2 cup butter 1/4 cup all-purpose flour 2 cups milk 2 cups shredded cheddar cheese 1 tablespoon grated romano cheese 1/2 teaspoon salt 1/8 teaspoon garlic powder 1/8 teaspoon dried thyme 1/8 teaspoon ground mustard 1/8 teaspoon coriander 1/8 teaspoon pepper 1 tablespoon white vinegar 6 eggs 6 slices Canadian bacon , warmed 1 large ripe avocado , peeled and sliced 3 English muffins , split and toasted
Directions: 1. In a large saucepan, melt butter. 2. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in the cheeses and seasonings. Cook and stir until cheese is melted; keep warm. 3. Place 2-3 inches of water in a large skillet with high sides; add vinegar. bring to a boil; reduce heat and simmer gently. 4. Break cold eggs, one at a time, into a custard cup or saucer; holding the cup close to the surface of the water, slip each egg into water. Cook, uncovered, until whites are completely set and yolks begin to thicken (but are not hard), about 4 minutes. 5. Place Canadian bacon and avocado on each muffin half. With a slotted spoon, lift each egg out of the water and place over avocado. 6. Top with cheese sauce.
Also. Tiropetes
preheat over 425 F
1 cube (approx 200-250g) feta cheese, crumbled 1/3 cup cottage cheese, dry 1tbs parsley, chopped 1 egg, beaten 1 tbs Parmesan (Optional) one package frozen prechopped spinach, thawed.
2 tbs margerine, melted 6 sheets phyllo pastry
Combine first set of ingredients in a bowl
Cut roll of phyllo pastry into rolls 2 inches wide. Remove 2 sheets of pastry dough and lay one atop the other. cover the remainder with a wet paper towel. Brush sheet with margarine.
Place a teaspoon of cheese mixture in the bottom right corner of the pastry strip. Pick up the bottom right corner and fold over so that it forms a triangular pocket with the filling inside. Fold up, then in the opposite direction. Continue folding up the length of the pastry strip.
Brush outside of completed triangle with margarine and place on ungreased baking sheet.
Repeat until all the filling is used.
Bake for 12-14 minutes, or until golden brown.

Sausage gravy and biscuits
1 tube refrigerated biscuit dough 1 lb pork sausage 3 tbsp flour 2 cups milk black pepper
First, bake your biscuits. Make some from scratch if you're really ambitious. For the gravy, brown the sausage in a skillet over medium heat, crumbling as it cooks. Take the sausage out of the pan with a slotted spoon and put in a bowl, leaving the grease from the sausage in the hot skillet. Add flour to the skillet and whisk to combine. Add the milk and whisk/stir until it begins to thicken. Add the sausage back in, and add pepper to taste. Serve over split biscuits.

Not bad either, but I'm pretty sure it's the most fattening breakfast of all time.

Ah, sausage gravy biscuits. Stupidly popular in the South, unheard of everywhere else. Not bad either, but I'm pretty sure it's the most fattening breakfast of all time. (Try as he might, Rat can't keep himself from panting and drooling--and this time, not at L herself.)

At least it does with me and bagels. >.> Yeah, my mom bought like 10 lbs. of sausage a while back, and I thought, what the hell am I gonna do with all that?! Guess I'll learn how to make biscuits and gravy. o.O
