I've recently become fascinated with the genre.
I got Napalm Death's Scum the other day (yeah, more grindcore, but meh), and I've been meaning to pick up some Death, Cannibal Corpse, and Carcass.

I'm more into the "non-extreme" genres of metal, so I mostly stick with the melodic stuff, but I'll venture into old-school death metal like Bolt Thrower, Pestilence, or Entombed once in a while.

DevilDriver is probably my favorite band of all fucking time. There's just something about Dez's lyrical style and how well its complimented by the band as a whole.

I think the only thing close to death metal I've listened to and liked is Mastodon.
Seriously, they are pretty awesome.
Also, I think Mike Patton's work can fall under this category.

I've heard stuff from Faith No More, Mr. Bungle, and Fantomas, and while shades of it leak into the former two occasionally, the only one that's ever gone full-blown death metal at any point would have to be Fantomas, IMO, and that's still more "avant-garde metal" than anything.
