How about this: for good anime, there is a strong negative correlation between audience age and eye size. For bad anime, there is a strong positive correlation instead.

I think the biggest eyes of all would have to be either Ghost Sweeper Mikami or Cyborg Kuro-chan. Neither is very good, though the latter's opening is worth watching for the Lady Q song.

Sounds to me like the hypothesis in the OP (a theory and a hypothesis are two entirely different things) is based entirely upon a small sample pool, which in turn is based on an even smaller population pool (anime that has made it to American airwaves).
It's further flawed in the fact that it doesn't take into account external factors, such as the quality of the English writing / dubbing.
Some shows get ripped to shreds when it comes time to dub them into English. Some dubbing studios, such as 4Kids! Entertainment and the late Streamline Pictures, are synonymous among anime fans for how badly they tended to mangle what they imported. In fact, Streamline's rendition of "Nausicaa of the Valley of the Wind" was so unrecognizable compared to the original that it was a full 10 years before director Hiyao Miyazaki allowed another American company to dub his works.
On the other hand, some shows are treated with such care that the English dub is actually regarded as being better than the Japanese dub. For example, the English dub of Transformers: Robots in Disguise is generally regarded by fans as superior owing to the fact that one of the writers was a massive fan of the franchise and one of the two voice directors had previously worked on the 1980s series; the two made it a point to not only improve upon the lackluster Japanese writing but also add a series of continuity nods. Likewise, the English dub of the El Hazard franchise was hailed by the series producer as being the official version owing to the fact that the writing staff had produced a more fluid work than his own staff.
