Okay, may be attacked for this but I prefer European Symphonic Metal. It's always sounds better sometimes Canada can, but I rarely hear a decent one from USA. I'll show ya some I really like.
This is just really to name ya fave band of genre, but if anyone can find a half decent American one I'd be interested in viewing.
Fairyland - Ride with the Sun (French)
Derdian - The Hunter (Italian)
Rhapsody of Fire - Silent Dream (Italian)
Crystal Eyes - Waves of War (Swedish)
Luca Turilli - Ancient Forest of Elves (Italian)
Leaves Eyes - A Viking's Word (German)
Sabaton - 40:1 (Swedish)
Last one I swear.
Falconer - Night of Infamy (Swedish)
So who likes this sort of music? And if ya do mind sharing?
Oh and if ya can find music like this in America which is half decent. (No Offence) Just what I've seen.

Well, they're not exactly symphonic, but Manowar's songs have been known to get rather operatic (on one of their albums I have, on all tracks but one, they do a splendid opera about the Trojan War).
If you want something symphonic, though, it's difficult to top the auditory beauty that is Dream Theater. ;D

And most importantly epic lyrics. My fave song by Dream Theatre is The Ministry of Lost Souls.

I don't care what you say about nationality, if they're good and happen to be American, I'll still recommend them.
Kamelot (American) Sonata Arctica (Finnish) Luca Turilli's Dreamquest (Italian) Battlelore (Finnish) Epica (Dutch) Blind Guardian (German) Symphony X (American) Galneryus (Japanese)

EPIC METAL POST - more Swedish, German, and Finnish bands than you can shake a stick at. Must be something in the water.
Stratovarius (Finland)
Mob Rules (Germany)
Time Requiem (Sweden)
Cryonic Temple (Sweden)
Timeless Miracle (Sweden)
Dreamtale (Finland)
UltiMatium (Finland)
Excalion (Finland)
Silent Scythe (Sweden)
Avantasia (Germany)
Dragonland (Sweden)
Edenbridge (Austria)
Thy Majestie (Italy)
Visions Of Atlantis (Austria)
Oratory (Portugal)
Aquaria (Brazil)
Out of all these, I'd say Dragonland, Avantasia, and Mob Rules are the best. Listen to the Dragonland song! It's absolutely majestic.
Edit: When Americans do this style of music, it tends to be a lot meaner and less "fluffy". Nevertheless, here's some American power metal.
Black Symphony
Cellador
Jag Panzer
The multi-talented Mark Boals
and lastly (I promise this time!), Theocracy, a Christian metal band that doesn't suck

To be honest most of these (with the exception of Leaves eyes and Sabaton) sound like speed metal. What I like is Therion, Nightwish, Within Temptation. That's with regards with the OP.

They're power metal bands. Speed is often a factor in the less symphonic ones.
