From context, I'm guessing it means something along the lines of, "This post is not an authentic Fundie post, but a satire by someone whose mind is no unlike our own," but I can't figure out how to make that fit in a "P-O-E" acronym.

Not sure of the origins, but it's generally flung at quotes people believe aren't genuine.

Yeah, Nathan Poe, internet religious commentator, came up with the law. He's submitted a few quotes and commented on the mainpage a few times as well.
